Cinnamon Chocolate Chip Banana Cake


Here’s another banana recipe to add to the arsenal. We can never have enough! I ALWAYS have overripe bananas in my freezer and you can only eat so much banana bread. I wanted to try something a little different, but not too different. We do bananas and chocolate a lot, but what if we add some cinnamon? This recipe really gives this a coffee cake feel, but it’s pretty rich so could easily be served as a dessert, perfect with milk or coffee!     • 3/4 cup of chocolate chips
    • 2/3 cup packed brown sugar
    • 1 Tbs. ground cinnamon
    • 2 Tbs. melted butter (reserve)
    • Optional: 1/2 cup chopped pecans or walnuts (I leave out due to daughters allergy)
  • 1 1/2 cups flour
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 2 tsp. vanilla
  • 1 stick soft butter or 1/2 cup (salted or unsalted)
  • 1 egg
  • 3 med-large mashed overripe bananas
  • 3 Tbs. buttermilk (Tip: sub with reg. milk and a few drops of vinegar or lemon juice, let set)


  1. Preheat oven to 350.
  2. Grease and flour an 8×8 metal baking pan.
  3. Mix topping together (minus melted butter) and set aside.
  4. In a medium sized bowl, sift flour, baking soda, baking powder and salt together.
  5. In a larger bowl, use an electric mixer to beat together sugar, egg, vanilla, bananas and buttermilk.
  6. Slowly add dry ingredients until well blended.
  7. Add half of this mixture to greased pan, then sprinkle with half of the topping mixture.
  8. Layer the rest of your batter on top of this and then sprinkle with remaining topping mixture.
  9. Drizzle melted butter over topping.
  10. Bake for about 40 min. or until toothpick comes out of center clean.
  11. Let cool.

    I didn’t know you could put overripe bananas in the freezer. That is the best tip! And your cake looks delicious too. (=

      Oh yes! Don’t waste those bananas! Peel them, cut them up and put in freezer safe bags. Then, pull them out when you need them for a recipe like this or use them for smoothies! 😀
