Cheesy Chicken Roll-Ups

I am always on the lookout for new recipes that my kids will actually eat.  It’s hard to get a variety of recipes to meal plan with if I know my husband and I will be the only ones eating them.  This is a quick and simple recipe that the whole family loves.  It isn’t the prettiest dish, but it is pretty yummy.  If you want, you can always add some extra veggies when you make it.  I put onions and mushrooms on Jason and I’s half and leave the kiddies side plain.  Look at those ingredients….I mean, how could you go wrong?

What You Need:

  • 3 Cups Shredded Chicken (or 2 Large Cans)
  • 2 Cups Shredded Cheddar Cheese
  • 1 Can Evaporated Milk (or 1 Cup Cream as a substitute)
  • 1 Can Cream of Chicken Soup
  • 2 Cans of Crescent Rolls
  • Salt and Pepper to Taste
  • Optional: Onions & Mushrooms

Instructions

  1. Preheat oven to 350°.
  2. In a bowl, mix your chicken and cheese together.
  3. Mix cream of chicken soup and evaporated milk together in a saucepan. Turn on low heat to warm (or microwave in a glass bowl).
  4. Separate crescent rolls, fill generously with chicken/cheese mixture, roll up and place in 9×13 baking dish.
  5. Pour heated soup mixture on top and lightly salt & pepper.
  6. Bake in oven at 350 for 30-40 min. or until a light golden brown.

Optional: Add onions or mushrooms on top of crescent rolls before pouring on the soup mixture.

      Yes! And if you don’t have evaporated milk (because I rarely do), you can easily sub some milk, cream, sour cream, etc. 🙂

  2. Yum! That sounds really delicious! You could probably put some peppers and add some spices like cumin and cajun seasoning. You could mix and match all over!

  7. My family definitely eats a lot of chicken, so this is one recipe we are going to have to try. We want to try and plan our meals this year, instead of just blindly grocery shopping. I can’t wait to add this to our list of recipes to try!

    I make something similar to this and my hubby also sticks his nose up when it comes out of the oven. He says that it is mushy chicken, but I love it!
