Creamy Cilantro Lime Dressing

It’s Taco Tuesday and bath night for the kids, but I’m really only excited about one of these.  One of my favorite simple meals is a good ole taco salad, but every salad needs a good dressing.  This is mine, but I’m willing to share.  Enjoy!

What You Need:

1 Cup Chopped Cilantro

Juice from 1/2 Lime

1/2 Cup Light Sour Cream (Plain Greek Yogurt may be substituted)

1/4 Cup Low Fat Mayonaise

3 TBS. Whole Milk

1 tsp. Minced Garlic

1/4 tsp. Onion Powder

1 tsp. Cumin

1/8 tsp. Chili Powder

Salt & Pepper to Taste

Optional for Extra Heat: Seeded Chopped Jalapeno


Combine all of the ingredients above in a bullet and blend until smooth and creamy.  Store leftovers (covered) in the refrigerator.  If the dressing becomes thicker than desired, add a little milk and shake or mix.  Use it to top your salad, burrito, tacos, enchiladas or just dip some veggies in it.

    It is taco Monday at our house and the last day of summer break for us. School starts tomorrow! I can’t wait to try this tonight on my taco salad! Thanks for sharing!
